This Vegan Frittata is easy to make and a great way to use up leftover vegetables. It’s egg free, gluten free, and oil free, and is a  delicious savory dish for breakfast, brunch, or even dinner!

Place tofu and seasonings in a food processor and blend until smooth.

Saute the onion in a nonstick skillet until lightly caramelized.

Add the spinach and garlic, and saute until the spinach is wilted.

Add the pureed tofu mixture, and stir together until well combined.

Spread the tofu mixture into a pie pan. Smooth the top.

If desired, decorate the top of the frittata with spinach and sliced tomatoes.

Bake until the frittata is set and the top is lightly browned.
