Make this vegan BBQ Soy Curl Sandwich in 30 minutes. The chewy soy curls are cooked in barbecue sauce, piled high on a bun with some crisp, fresh coleslaw, for a sandwich that would satisfy even the meat eaters at your table. Great for picnics, barbecues, or game day!
Place the soy curls in a bowl and pour hot water over them. Allow them to sit in the liquid for about 10 minutes.
While the soy curls are soaking, mix up the ingredients for barbecue sauce. If you don't want to make your own barbecue sauce, you can use your favorite bottled barbecue sauce. Be sure to check the ingredients to make sure your barbecue sauce is vegan.
Drain the soy curls, and squeeze out most of the liquid.
Place the soy curls in a large nonstick skillet and pour the barbecue sauce over them. Saute them on medium heat, until the soy curls start to get crispy and brown on the edges.
Make up a batch of my Vegan Coleslaw. If you don't want to cut up your own cabbage, use a bag of coleslaw mix from the store.
Pile the soy curls onto a bun, along with some coleslaw. You can also add pickles or onions to your sandwich.
Notes
I like to reduce the sugar in my coleslaw dressing when using it for this recipe.
