Vegetable bouillon or broth is one of the kitchen staples that every vegan kitchen should have. It adds a burst of flavor to any dish, from soups and stews to casseroles, and even re-hydrating soy curls.

Store brought bouillon can be high in sodium and full of preservatives. With a homemade version, you can adjust the salt and seasonings to suit your taste and health requirements.

Ingredients

Creating your own bouillon powder requires just a few simple ingredients. (See the recipe card below for exact measurements.)

  • Nutritional Yeast – this is a key ingredient in this recipe and adds a lot of flavor. I don’t know of any substitute for it.
  • Garlic Powder
  • Onion Powder
  • Dried Parsley
  • Italian Seasoning – I buy a premixed Italian seasoning blend. If you don’t have it, combine equal amounts of dried oregano, basil, thyme, and rosemary.
  • Turmeric – adds a golden yellow color as well as some beneficial nutrients.
  • Salt
  • Celery Seed or Celery Salt – note that celery salt adds additional sodium.
  • Black Pepper

What is Nutritional Yeast?

Nutritional yeast (affectionately called “nooch”) is a deactivated form of Saccharomyces cerevisiae, commonly known as baker’s or brewer’s yeast. Since it is deactivated, it will not behave like the active yeast that you use in baking. This yeast comes in a flake form that looks similar to fish food flakes. It may look a bit funky, but give it a try!

Nutritional yeast is a great source of protein and of vitamin B12 that vegans and vegetarians (and actually most of the population) need. Many brands are also fortified with other vitamins and folate. There are unfortified varieties like Anthony’s.

In addition to its health benefits, nutritional yeast has a savory, nutty flavor, and when combined with other ingredients can add a cheesy flavor to recipes.

How to Make Homemade Vegetable Bouillon Powder

Measure out all of your ingredients and add them to a blender or food processor. Blend them for about 20 seconds to form a powder.

If you prefer, you can just whisk the ingredients together in a bowl, but I find the ingredients incorporate better when you blend it.

To make the vegetable broth, just combine 1 rounded teaspoon of the vegetable bouillon powder with a cup of hot water.

How to Store Vegetable Broth Powder

Transfer the bouillon powder to an air-tight jar and store in a dark cupboard. Herbs and spices can degrade when exposed to light and moisture.

Dry spices have a long shelf life, but I recommend using this bouillon powder within a year.

This broth powder adds a savory depth of flavor to so many dishes.

  • Soups and Stews: Add depth and flavor to any soup or stew with a couple spoonfuls of bouillon powder.

Ingredients
  

  • 1 cup nutritional yeast
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 tablespoon dried parsley
  • 1 tablespoon salt
  • 2 teaspoons Italian seasoning
  • 1 teaspoon turmeric
  • ½ teaspoon celery seed
  • teaspoon black pepper

Instructions
 

  • Place all the ingredients in a blender and blend until powdered and combined.
  • To make veggie broth, stir 1 rounded teaspoon of the veggie bouillon powder into 1 cup of hot water.
