Oil Free Multigrain Bread Recipe for the Bread Machine

This multigrain bread recipe is healthy, hearty, and made with wholesome ingredients like whole wheat flour and maple syrup! With just a few minutes of hands on time, you can have delicious homemade bread any time you like!

Do you own a bread machine? Maybe it’s gathering dust on a shelf in your garage. Well it’s time to dust it off because there’s nothing better than the smell of fresh bread baking. And making your bread in a bread machine is mostly hands off. So easy!

I absolutely love homemade bread! And there can certainly be something therapeutic about taking a day to make bread by hand. But all that kneading and rising takes time, and with the busy lives most of us have, a bread machine is the way to go when you want that homemade bread flavor and aroma!

The machine I use is a Hamilton Beach Artisan Bread Machine. It makes nice large loaves of bread, has a dough setting, and you can even use it to make jam! (I haven’t tried that yet.)

Why should I make my own bread?

If you’re following an oil free vegan diet, it can be hard to find good oil free bread in the store. Most sourdough breads are oil free, but they’re usually made with processed white flour. If you’re lucky enough to find an oil free whole grain bread in the store, it’s likely to be quite expensive.

When you make your own bread, you control the ingredients. You can make a whole food plant based loaf of multigrain bread with 100% whole wheat flour and just a few other ingredients. And purchasing the small amount of those ingredients needed to bake your own bread costs a fraction of what you would pay for a high quality loaf of bread.

Isn’t bread already vegan?

Some breads are vegan, but many contain milk, honey, or eggs. Almost all contain oil, enriched white flour, and chemical preservatives. My bread contains only wholesome vegan ingredients!

What ingredients do I need for making multigrain bread in the bread machine?

Ingredients for multigrain bread
  • Warm water
  • Maple syrup – organic sugar, coconut sugar, or date syrup could be used in place of the maple syrup
  • Applesauce – this is used as an oil substitute
  • Salt
  • Whole wheat flour
  • Multi-grain cereal – I used a seven grain cereal from Bob’s Red Mill. Use any multigrain cereal blend. I have found 10 grain blends that are nice in this bread.
  • Vital wheat gluten – to help develop elasticity in the bread dough
  • Instant yeast

How to make oil free bread in the bread machine

Every bread machine is different, so be sure to read the instruction manual that came with your bread maker. Most machines instruct you to put the liquid in the pan first, then the dry ingredients, and the yeast last.

If your machine has a whole wheat bread setting, select that. I also select a medium crust.

This recipe makes a 1 1/2 pound loaf.

Allow the bread to cool completely before slicing.

Frequently asked questions

How long will this bread keep?

Since this multigrain bread does not contain preservatives like store bought breads, it will not keep as long. Store it in a closed bag for 4 to 5 days. It can also be frozen for up to a month.

Do I need to use bread machine yeast for this recipe?

Bread machine yeast, instant yeast, and rapid rise yeast can be used interchangeably in this recipe. Here’s a great article that discusses the different types of yeast. If you decide to use regular active dry yeast, increase the amount of yeast by 1/2 teaspoon.

Can I leave out the vital wheat gluten?

The gluten is added to this bread to provide elasticity to the dough and improve the structure of the bread. Without the added gluten, the bread will come out dense.

  • Add ingredients to the bread machine pan in the order recommended by your bread machine manufacturer.
  • Bake the bread on the whole wheat setting according to your bread machine instructions. Use the whole wheat bread setting if your machine has it. Choose a medium crust.
